Its such an ugly, rainy day today. Been working all day and had some delicious tacos for lunch, but I would much rather go for a hot, steaming bowl of spicy khaub piaj (Hmong-style chicken noodle soup)! If there is any interest, I'll post up my recipe for those of you who may not know how to make it. It took forever for me to learn how to make the noodles from scratch. My mom never really made it, so I never learned how to properly cook it. And whenever I asked people for their noodle recipe, everyone would just say "Oh, you just keep mixing until it turns out right." I spent a long time messing around with several recipes until I got it to the way I like it.
I keep my khaub piaj pretty simple: shredded chicken, cilantro, green onions, red chili peppers. I love having extra broth, and I make my noodles smaller than other people do. I also like to drizzle my bowl of khaub piaj with fish sauce. Yum!!
